1,3-Dihydroxyacetone (DHA)

1,3-Dihydroxyacetone (also known as DHA, glycerone, or 1,3-dihydroxy-2-propanone) is the simplest ketotriose (3-carbon ketose sugar) with the molecular formula C₃H₆O₃ and a molar mass of 90.08 g/mol.

Basic Properties

- Appearance: Hygroscopic, white crystalline powder with a sweet, cooling taste and a mild characteristic odor.
- Solubility: Highly soluble in water (>250 g/L at 20°C), ethanol, ether, and acetone.
- Melting Point: 75–80°C.
- Stability: Stable at pH 4.0–6.0; degrades in strongly alkaline conditions.
- Structure: Exists as a cyclic dimer in solid form; dissociates into a reactive monomer in aqueous solution. It has no chiral center, making it achiral.

Production

Commercially, DHA is primarily produced via microbial fermentation of glycerol using acetic acid bacteria (e.g., Gluconobacter oxydans). It can also be derived from plant sources like sugar beets and sugar cane.

Main Applications
