Today’s Italian feature is another one you probably think of…..cheese! Specifically the Parmigiano-Reggiano cheese is one that even by the name calls out that it is local. Not only that, but just like champagne can only be called that if it’s from that region of France…the same holds true for Parmigiano-Reggiano! The same cheese produced outside of the region you may better know as Parmesan cheese.
The younger cheeses (12 month and 24 month) are great for eating on their own but the flavor gets stronger as it ages. The texture gets harder and some crystals will form as it gets aged longer too. 24month aging and up is great for grating for your pasta or using in other cooking as well. I even saw some up to 70 month in the stores!! As you can see in the photos at this store, they take it seriously and you can get anything from a small slice to a whole wheel to take home. I picked up some 30 month here as well as come other ages at another place too to bring home.
