Y'all won't believe the tale I'm fixin' to spin...
Back in my prime panning days I got myself lost in the dang Hassayampa Wilderness for a whole damn week!
Was out prospectin' for gold, sluice box on my back, when I took a wrong turn near the river. Next thing I knew, I was deeper in them woods than a tick on a c**n dog's bu****le!
All I had with me was my trusty sluice box, a canteen of water, and one loaf of my wife's famous homemade banana bread – which she calls ‘Gold 'n Paydirt banana bread’, on account of them golden raisins and ground cinnamon.
I thought for sure I'd be eatin' my boots by day three, but that bread... LORD HAVE MERCY! It was like sluice-boxin' for calories – every bite yielded a new payload of energy. Not only did I survive but I came out them woods with crumbs in my beard and two and a half ounces of chunky pickers!
I’m fittin to share the recipe with y’all, but only because the misses gave her permission first.
Fill up your stomache, then your pan, and strike gold with this recipe, partner!
Gold 'n Paydirt Banana Bread Recipe
Ingredients:
* 4 large ripe bananas, mashed (like gold nuggets from my claim)
* 1 cup honey (harvested from local bees near my mining spot)
* 1/2 cup melted pure coconut oil (smooth like river rocks)
* 2 large eggs (from my prospector friend's farm)
* 2 tsp ground cinnamon (harvested from Ceylon trees)
* 1/2 tsp salt (from natural Himalayan deposits)
* 1 3/4 cups whole wheat flour (milled from stone-ground grains)
* 1 cup golden raisins (sun-dried like gold in the desert)
* 1 tsp vanilla extract (from real Madagascar beans)
* Walnuts optional (like extra nuggets hidden in the bread)
Instructions:
1. Preheat oven to 350°F (like heat from a desert gold hunt).
2. Mix bananas, honey, oil, eggs, cinnamon, and salt in a large sluice... err, bowl.
3. Add flour, golden raisins, and vanilla extract. Stir until combined.
4. Fold in walnuts (if using), like adding gravel to my prospecting pan.
5. Pour into a greased 9x5 loaf pan (like a gold bar mold).
6. Bake 55-60 minutes or until toothpick comes out clean (pit it to the gold test).
7. Let cool, then slice and serve – pure gold n’ paydirt!
