Nestled deep in the heart of the magnificent Otway Ranges, an old ESSE Fairy lays dormant inside the former Laver's Hill bank. On a cold June morning, Pivot Stove & Heating came along and replaced that old wood stove with a beautiful new ESSE wood stove.

With its rustic exterior, excellent warmth and unrivalled cooking capabilities, this new cooker was the perfect match for this beautiful historic home. And when that fire is lit, this old house's soul is reignited and it truly becomes a home.

With services cancelled this year, we wanted to do something to commemorate.

Our friends at Pivot Stove have helped us by sharing Suzanne's grandmother’s famous ANZAC Biscuits!

Warm, gold and straight from the oven, these biscuits are the perfect way to celebrate ANZAC Day!

1 cup Oats
1 cup Flour
1 cup Sugar
¾ cup Coconut
125g Butter
2 tbsp Golden Syrup
½ tsp Bi-Carb Soda
1 tbsp Boiling Water

Pre-heat oven to 180°C
Combine oats, flour, sugar and coconut
Heat butter and golden syrup over gentle heat until melted
Combine boiling water and soda – add into saucepan (it will expand)
Add to dry ingredients
Cook in slow oven approx. 15 minutes
