Not just your average wine bar, Innocent Bystander required a fully commercial kitchen to be able to provide beautiful food to match with their wines. We imported a Marana Forni pizza oven from Italy and elevated the whole kitchen so it was on display for the patrons to view the chefs cooking away.

What was once the home of OLSK transformed this space into a sophisticated wine bar for in Healesville. Designed in collaboration with this was our first major Design and Construct project in Melbourne. After being appointed as the contractor under and ECI process, the consultants were then novated to OLSK to ensure budget and timeframe were adhered to. After a quick round of re-design, we managed to save the client 9 months of time and over $1M dollars by creating a better buildable solution.
