What questions should food processors ask before investing in a cutter?

Investing in a cutting machine is not just a technical decision. It affects production efficiency, hygiene, yield, labour, changeover, product quality, and long-term cost per kilo.

That is why the evaluation should go beyond capacity, footprint, and purchase price. Those factors matter, but they do not show how the machine will behave in the real world with the processor’s actual product, operators, cleaning routines, and production targets.

For cheese processors, for example, a machine such as Centris 400C makes the discussion more concrete. Shredding cheese is not only about volume; it is about cut quality, consistency, product behaviour, and reliable integration into the full production line.

In meat processing, capacity only pays off when the product still flows. High output is only valuable when the cut product remains consistent, free-rolling, and easy to handle further down the line.

That becomes especially important with frozen or low-temperature meat. Texture, fat, moisture, and salt content all influence how the product behaves during cutting. A process that produces sticky, irregular, or damaged pieces may still meet the required capacity, but it often creates pressure on weighing, packaging, and downstream handling.

This is where cut quality becomes part of line efficiency. Clean dice and strips not only improve appearance; they help protect yield, support portion control, and reduce avoidable disruption after cutting.

The best cutting performance is not measured solely by the cutter. It shows how smoothly the product moves through the rest of the line.

Our yearly FAM STUMABO teambuilding took us to the beautiful Flemish Ardennes.

A day away from the workplace, with colleagues choosing their own kind of challenge: off-road bikes, a laser battle, funky balance exercises… and probably a few comfort zones left behind along the way.

After a full day of action, we gathered around the BBQ to recharge, laugh, and enjoy time together.

Strong teams are not built only in meeting rooms. They grow through shared moments, good energy, and the kind of stories people still talk about on Monday morning.
