Sage is doing a lot of quiet work in this kitchen.

It is a colour that sits between green and grey depending on the light, which is why it holds up in a room with beams and a leaded window rather than fighting them. The shaker fronts are framed and painted, with the wood grain still reading faintly through, and the handles are simple dark k***s - deliberately plain, because the door profile is already carrying the detail.

The open ended breakfast bar is the piece that turns it from a kitchen into a room. Turned legs, carved detailing across the rail, open shelves underneath for the everyday plates and the coffee pot. Behind it, glazed wall units with fluted glass, a moulded cornice running above, and a built-in window seat with a cushion on it.

Open shelving is a spectrum, not a single decision.

At one end, two slim shelves painted to match the cabinetry, holding the mugs and bowls in daily use and nothing more. At the other, a full-height oak column at the end of a run with six deep shelves for crockery, cookbooks, the coffee pot, everything a household accumulates and wants within reach.

In between, the version most people never think of. A lit niche cut into a tall run, oak-lined, with drawers beneath and space below for a basket. Storage that does a job rather than a display.

And then the sliding wall units, which sidestep the question entirely. Glass shelves on an oak back, lit softly, with a shutter that closes over them when the room needs to be quiet again.

Open shelving asks a fair question of a kitchen: what are you willing to look at every day?

Three answers here. In the first, shelves recessed into a deep green arch, floating clear of the wall so the curve behind them stays unbroken - and a set of open cubbies at the end of the island for the plates and bowls in daily rotation.

In the second, a rail system running the length of the splashback, with slim shelves and hooks that reposition as the kitchen changes, plus pale open boxes cut into the dark island for the things you reach for without thinking.

In the third, shelves under a freestanding sage bar, the most traditional version of the idea and the most honest one. Crockery on show because it is being used.

Black does not have to mean modern.

This is a traditional shaker, framed doors and all, taken somewhere darker. The oak grain still reads through the finish, so the fronts have depth rather than sitting flat, and every handle is brass - the one warm note that keeps the whole thing from going severe. A vertical beaded splashback runs behind the hob, catching light in fine lines.

The island is freestanding, on turned legs, with carved detailing across the rail and open shelves beneath for the kettle, the pans, the tins you actually use. It reads as furniture that happens to be in a kitchen rather than a run of cabinetry with a worktop on top.

Dark kitchens ask you to trust the details, because there is nowhere for them to hide.

The fronts here are a fine-grained black with a brushed direction to them, so the surface catches light along its length rather than going flat. Handleless throughout, with the drawer joints reading as thin lines of shadow. Against all that darkness, bronze - a full-height metallic panel on the tall run, and a second one on the wall carrying a rail system with slim shelves and hooks for the things you use every day.

The glazed cabinets are where it turns. Vertical strips of light run the full height inside, so glassware and ceramics sit in their own small pools of illumination and everything around them recedes.

Storage that stands up rather than spreads out. The tall unit is where a kitchen earns its storage space.

A full-height pull-out brings every jar, packet and tin forward to eye level, so nothing is lost to the back of a low cupboard. Behind bi-fold pocket doors, an oak-lined interior holds the coffee machine, the glassware and the everyday clutter, then closes away completely when the room needs to be calm again. Door-mounted trays put what you reach for most within arm's length, with the deeper shelving behind for everything else.

It is the difference between a kitchen that holds your things and a kitchen that hides them well.

Shaker, with the country taken out of it.

The door is the same framed profile you would find in a cottage kitchen - a recessed panel, a defined border, a shadow line where the two meet. What changes everything is the absence of a handle. In its place, a dark recessed rail set into the frame, so the run of drawers reads as an unbroken line rather than a row of handles.

The colour is a warm putty, somewhere between stone and green depending on where the light falls, with the wood grain still visible through the paint. Against it, a concrete-toned splashback, a pale worktop, and black glass wall units lit from within so the glassware inside floats rather than sits.
