A few weeks ago I figured out small handles for my 8” and 10” size of pans. I think they turned out good, I put my makers mark on the underside of one of the handles. Before: a clean, even layer of seasoning
After: the seasoning held steady - smooth, intact and performing exactly as it should

Carbon steel isn't just for high-heat searing. It's performance in baking is a great way to see the seasoning put to the test.

Even Heat = consistent crumb. The pan heats quickly and distributes evenly, so the centre sets without overbaking the edges

Natural release improves over time. As the seasoning builds, baked goods start lifting out more easily - no liners needed

We’ve been putting our carbon steel pans through some serious testing lately — really seeing what the seasoning holds up to and what pushes it a little further than expected.

This week’s experiment: smoked beans.
Delicious, but definitely reactive enough to noticeably reduce the seasoning layer. We meant to grab a before‑and‑after photo, but the beans distracted us.

The good news?
A quick re‑season brought the pan right back. That’s the beauty of carbon steel — even when something challenges the finish, it’s easy to restore.

For anyone who cooks a lot of acidic or long‑simmered dishes, it can be handy to keep a stainless steel pan in the kitchen as well — they don’t rely on seasoning, so they handle those recipes without affecting the finish on your carbon steel.

We’ll keep sharing what we learn as we test, cook, and push these pans in every direction.
