Can you see the difference between sharpening the high carbon stainless steel vs the carbon steel knives? The high carbon stainless steel is the top seller, because it 'stains less', sharpens up easily and doesn't require oil, although you should keep it clean and dry after use to prevent staining or corrosion.
The carbon steel however has a very high carbon content, and for the die-hard carbon lovers out there, there is no other option! Carbon sharpens up much faster and easier, and holds it's edge longer. It does however need to be kept cleaned and oiled at all times or it can corrode.
