Our chefs are putting the 27-gallon Firex Figaro to work, turning out a Philly Pork Sandwich that hits every note—tender, savory, and stacked with flavor.
Slow-roasted tradition meets modern pressure cooking:
Thinly sliced pork shoulder, sharp provolone, and garlicky broccoli rabe (or spinach) piled onto a crusty seeded Italian roll, finished with rich pork jus.
What normally takes 3–4 hours was done in just 45 minutes inside the Figaro. Same depth of flavor—fraction of the time.
