During MISTA On The Road, participants visited The Cultured Hub, a joint initiative by Bühler, Givaudan, and Migros-Genossenschafts-Bund. The Hub was designed to support start-ups and established companies as they develop and scale cellular agriculture and cultivated food and beverage products.

For the industry, this kind of shared infrastructure can help reduce barriers to scale-up and bring promising concepts closer to market.

𝗖𝗮𝗻 𝗺𝘆 𝗳𝗮𝗰𝘁𝗼𝗿𝘆 𝗱𝗼 𝘁𝗵𝗶𝘀 𝘁𝗼𝗼? 🥐

At Bakery China 2026 in Shanghai from May 20-23, this customer question guided our conversations with bakery and confectionery professionals from across the industry.

Our booth was designed to make complete solutions easier to understand, evaluate, and apply. Through live equipment demonstrations, visual process explanations, 3D line models, and product experiences, we showed how technology can become more intuitive, practical, and relevant for industrial producers.

As Haiyang Xia, General Manager of Foods Business, Bühler Greater China, put it: “We examine ourselves from the customer’s perspective: How can we provide greater convenience for them?”

At the IPIA Forum, Bühler brought together partners across the sustainable protein value chain, from raw materials and bioprocessing to formulation and finished products. Lars Knutstad, Director of Business Development at our partner Pow.Bio, was invited to speak at the event.

Together with the China Association of Bakery & Confectionery Industry, we co-organized the 2026 Industrial Baking and Intelligent Manufacturing Forum. It focused on how central factories of traditional bakery chain stores can upgrade through automation, digitalization, and intelligent manufacturing.

Because the future of baking is not only about new products. It is about connecting customer needs, technology, and industry trends to create value in real production environments.

In the second video of our series, Alex Bastos, Head of Front End Innovation at Givaudan, explores the question: “How do we make future food not just possible, but irresistible?”

This was also a central theme during MISTA On The Road at the Givaudan Zurich Innovation Center in Kemptthal. The program brought together MISTA members, experts, and more than 15 food tech start-ups for technical discussions, networking, sampling, and exchanges on how collaboration can accelerate innovation integration.

Food innovation starts with ideas. But making those ideas work at scale takes the right combination of technology, process know-how, application expertise, and collaboration.

In this first video of our series, our CTO Ian Roberts looks at one key question: “What separates a great food concept from a product that can really make it to market?”

It is a question many food innovators face. A product needs to be desirable, technically feasible, scalable, and relevant for a changing food system.

That is why Bühler, Givaudan, and MISTA are working together to support food innovation through shared capabilities and open collaboration. The extrusion hub at the MISTA Innovation Center in San Francisco gives companies the opportunity to conduct product development trials for extruded products and move ideas closer to commercial reality.
