THE FIRST LAYER OF THE PROTEIN CODE: 9 ESSENTIAL AMINO ACIDS. 🔬

In the first post, we looked beyond the protein percentage and introduced the idea that protein quality starts with something deeper: its amino acid profile.

So, what exactly makes an amino acid “essential”?

Our bodies utilize 20 amino acids to construct proteins and support numerous biological functions. But there are 9 that our bodies cannot produce in sufficient amounts. These are the essential amino acids, which we need to obtain from our diet.

They are Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, and Valine.

Each one plays its own role in the body, from supporting protein synthesis and tissue maintenance to contributing to metabolism and the production of important biological molecules.

But here is where it gets interesting.

Knowing that a protein contains all 9 essential amino acids is only part of the story. Different protein sources can provide these amino acids in very different amounts and proportions.

This means that two protein sources can contain similar amounts of total protein while offering very different amino acid profiles.

So when we start decoding protein quality, we need to look beyond simply asking:

- Are the essential amino acids present?

- How much of each one does the protein provide?

- And how does that profile compare with what the body needs?

The 9 essentials are the first layer of the code. But they are only part of the full picture.

Let’s say Product A contains 20% protein, while Product B contains 15%.

If your goal was to increase your protein intake, the answer seems obvious. You’d go with Product A.

And you’d be right. It is that simple when we consider only the amount of protein. But protein is not only about how much you consume. The quality of that protein matters too, including the amino acid profile it provides.
And that is where the story gets more interesting.

Proteins are made up of amino acids, and different protein sources can contain very different combinations and proportions of them. While all proteins are built from the same 20 amino acids, their individual profiles are not the same.
Among these 20, 9 are essential amino acids, meaning our bodies cannot produce enough of them, and they need to come from our diet. The remaining 11 are non-essential, meaning our bodies can synthesize them, although they still play important roles in biological functions and protein synthesis.

So when we look beyond the percentage on the label, we start asking more meaningful questions:
* Which amino acids are present?
* In what amounts?
* And how well can the body digest and utilize them?

That is where protein quality comes into the picture. Because the number tells us how much protein is there. The amino acid profile starts telling us what that protein actually brings to the table. And that is the first layer we need to decode.

Over the past few weeks, we've explored why Water Lentils are one of nature's most fascinating protein sources.

To close the series, let's look beyond nutrition.

Because every protein comes with an environmental footprint, and the resources required to produce it can be just as important as its nutritional value.

🥩 Beef → Producing 1 kg of beef emits ~60 kg CO₂e, making it one of the most carbon-intensive foods in the world.¹

🌱 Soy → Since 2001, soybean expansion has been associated with approximately 8.2 million hectares of deforestation worldwide, contributing to biodiversity loss and releasing large amounts of stored carbon through land-use change.²˒³

🫛 Pea → Pea protein has a relatively low carbon footprint, but it still depends on fertile arable land and requires approximately 4,000 liters of water to produce 1 kg of dried peas.⁴˒⁵

🌰 Almond → Producing 1 kg of almonds requires approximately 12,000–16,000 liters of water, making water availability a key sustainability challenge in almond production.⁵

🌿 Water Lentils → Cultivated in aquatic systems rather than on agricultural fields, however, Water Lentils can be grown on non-arable desert land, using brackish water instead of freshwater. This cultivation model reduces competition for fertile farmland while focusing on groundwater that is naturally abundant in the deserts.

Every protein has its strengths and its trade-offs.

A single ingredient won't define the future of protein. It will be defined by how wisely we use our planet's resources.

Plant proteins, such as those from peas, have helped shape today's food industry, but they still rely on arable farmland.
