"We're too small for that."
Food safety law doesn't have a small-business exemption. A 20-seat café and a hospital catering unit answer to the same standard.
What gets smaller: the number of fridges, the team, the budget.
What doesn't: the duty to record, act, and prove it.
And smaller doesn't mean safer. One walk-in fails on a Saturday night, nobody's there to notice, and by Sunday morning the only honest answer to "how long was it out of range?" is "we don't know."
That answer costs you the stock.
One named owner. One routine nobody has to remember. Records that write themselves.
Compliance shouldn't cost a small kitchen its evenings. 🧡
