Fascinating keynote talk from Dr. Jens Nielsen (BioInnovation Institute, Chalmers University of Technology) at the Microbial Food and Feed Ingredients Conference in Copenhagen.
He spoke on the synthetic biology of yeast in the production of food ingredients, particularly fats. He covered the huge improvements in land use, greenhouse gas emission and water use when production switches to plant-based meat substitutes. Fats synthesised by yeast have a key role to play in giving these plant products flavour and texture. The talk showed the viability of yeast in the production of multiple fatty acids and was a great start to the conference.
