Last week we hosted a panel discussion at Co-op Live, “The Future of Hospitality: Design, Community and Sustainability,” with Guy Dunstan, Franky Rousell, Camilla Topham and Lucy Noone Blake.⁠

Panellists discussed why designing around a brand’s own story lasts longer than following trends, how colour, texture, scent and sound can work together in a space, and why Manchester gives independent operators room to take risks. The conversation also covered how a venue’s values show up in practice, including Co-op Live’s music-first design, community programmes, solar panels, harvested rainwater and locally sourced food.⁠

The evening continued with drinks, networking and backstage tours.⁠
⁠

Under the Table: Episode Four, Catherine Ramsden, the Founding Director of , a multi-disciplinary collective of architects, engineers, and sustainability consultants working from a single open studio in London.

Under the Table is a series of conversations with leading architects and designers. It aims to explore the experiences and influences from childhood onwards that shape a practitioner. The series takes its name from the place Roger Tyrrell, and I’m sure many of us, first experienced the essentials of dwelling - under his parents’ kitchen table as a young child.

The selection spans different formats and shapes, in greens, rusts, ochres and greys. Colour can be carried through a scheme in a single tone or layered across formats, with profile and finish adding variation within it.

After more than twenty-five years in their previous Manchester studio, SimpsonHaugh relocation to King Street marked the start of a new chapter for them in the city, and Spolia offered a direct way to carry their history with them.⁠

Glass and terracotta samples salvaged from the practice's own material archive were brought to our manufacturing facility, where members of the team embedded the fragments by hand, working with the material before it was cured, dried, and polished. That act of making together gave the transition real weight. ⁠
⁠
Installed as a central countertop, Spolia now sits at the heart of the studio's daily life - a place for gathering, dining, and conversation. The surface holds visible traces of where it came from, keeping the practice's history present in a form that is practical, robust, and quietly intriguing. ⁠
