With nearly a century of cooperage heritage, J.M. Gonçalves barrels are trusted by winemakers, distillers, and producers who demand exceptional quality, full traceability, and consistent performance.

A COOPERAGE BUILT ON HERITAGE
The story begins almost 100 years ago with Abílio Gonçalves in the Trás-os-Montes region of Portugal, crafting barrels for local wine producers using traditional methods passed down through generations.

His son, José Maria Gonçalves, expanded this craft internationally in the 1960s, refining his skills in France before establishing his own workshop. Through dedication to traditional cooperage and continuous innovation, the family business grew into a state-of-the-art facility on Portugal’s east coast in 2001.

Today, J.M. Gonçalves combines old-world craftsmanship with modern precision technology to produce barrels recognised globally for their consistency and organoleptic excellence.

EXCEPTIONAL OAK SELECTION & FULL TRACEABILITY
Only carefully selected oak from ecological, sustainably managed forests is used.

Every tree trunk is personally selected by the cooperage, guaranteeing origin and quality. The entire journey — from forest to cellar — is fully traceable and certified by Bureau Veritas.

Oak is naturally seasoned outdoors for a minimum of 24 months (often up to 36 months), exposed to natural weather conditions to develop superior structural and aromatic qualities.

Our wooden keystones are available in both No.1 and No.2 sizes, ensuring compatibility with traditional casks used throughout the brewing industry.

A keystone is a precision wooden closure fitted into the keystone bush at the head of the cask. It forms a critical part of the cask conditioning and tapping process, providing the point where the tap is inserted when the cask is ready to serve.

Each keystone is manufactured from quality hardwood and features a partially pre-cut centre. This creates a controlled weak point that allows the tap to be driven through cleanly when the cask is tapped, while still maintaining a secure seal around the tap.

Designed to fit tightly within the keystone bush, wooden keystones help maintain pressure within the cask during conditioning and ensure a reliable seal until the beer is ready to be dispensed.

With the correct technique and experience, a cask can be tapped quickly and cleanly with minimal spillage, using either a traditional wooden or plastic tap.

Our traditional soft spiles are an essential tool for cask ale and real ale cellar management. Made from natural cane, these porous pegs gently vent excess carbon dioxide from the cask during conditioning and service, helping your ale develop perfect natural carbonation, flavour, and clarity.

Inserted into the cask shive once the cask has been tapped, soft spiles allow controlled gas release while preventing over-conditioning or fobbing. Once the beer has settled and reached the desired condition, the soft spile is replaced with a hard spile to retain carbonation.
