AUS FEST #1 - Manchester ๐Ÿ‡ฆ๐Ÿ‡บ๐Ÿป

What a way to kick things off!

Aus Fest number one in Manchester was an absolute belter. A huge thank you to everyone who came along, it was brilliant to spend the evening with 30 thirsty brewers talking Aussie hops, and what makes Australian varieties some of the most consistently high-quality hops in the world.

Massive thanks to the team at NORTHERN MONK REFECTORY // MCR for looking after us so well all night, and a big shoutout to all the artists who performed too! ๐ŸŽถโœจ

We worked our way through the beers pouring, every single one was tasting fantastic. Bold, bright, packed with new-world character and serious quality.

Weโ€™re already counting down to AUS FEST #2 in Bristol at Drink Moor Beer. Canโ€™t wait to do it all again!

Non-alcoholic brewing needs flexibility.

Different production methods demand different flavor solutions, from balanced lager-style profiles to bold hop-forward concepts.

In this reel, Marius from the BarthHaas Brewing Solutions team explains how PRYSMAยฎ helps build aroma, flavor, and drinkability across a wide range of non-alcoholic styles.

Dry hopping remains a powerful tool in non-alcoholic brewing.
ย
Hop aroma helps rebuild flavor, mouthfeel, and drinkability, but process stability matters too.
ย
Liquid hop extracts deliver concentrated aroma potential while helping reduce hop creep risks in biological non-alcoholic brewing.

Non-alcoholic beer is no longer a niche category. Expectations are rising fast, and drinkers want the same flavor, aroma, balance, and mouthfeel they expect from full-strength beer.

That is where the challenge begins.

Without alcohol, flavor stability behaves differently. Aroma integration changes, microbiological risks increase, and shelf life becomes harder to manage consistently.

In this free Hops Academy webinar, our experts explore practical approaches to flavor stability in non-alcoholic brewing, from process design and yeast management to hop strategy and microbiological control.

Maltose-negative yeast strains give brewers new opportunities for flavor development in non-alcoholic beer.

By controlling fermentable sugars during mashing and using specialized yeast strains, low alcohol levels can be achieved through fermentation itself, while maintaining aroma, flavor, and mouthfeel.

Combined with the right hop strategy and strong microbiological quality management, biological production methods offer a versatile approach to modern non-alcoholic brewing.

Flavor in non-alcoholic beer is shaped by more than individual compounds alone.

The bigger challenge lies in how flavor compounds interact within the beer matrix. When alcohol is reduced or removed, the balance between bitterness, sweetness, aroma, and mouthfeel changes significantly.

This is why non-alcoholic beer requires a different brewing approach, one focused on sensory balance, interaction, and overall drinkability.

In this video, Stefan from Fermentis By Lesaffre explains how low-alcohol beers can be brewed using the equipment already available in the brewery.

NA beers produced using biological processes, such as maltose-negative yeast strains, limit alcohol formation during fermentation itself, rather than removing alcohol afterwards.
This allows brewers to maintain aroma, flavor, and mouthfeel across a wide range of styles while keeping alcohol levels low.
