This coffee was acquired through auction, representing not only a quality benchmark but also a commitment to transparent sourcing and long-term relationships at origin.

Produced at Gaharo Hill, a site known for its meticulous cherry selection and controlled natural processing, this lot expresses the intensity and structure that well-executed Burundi naturals can achieve.

Expect a profile with layered fruit complexity, pronounced sweetness, and a structured, wine-like character — while maintaining clarity in the cup.

For us, coffees like this reflect the direction we believe in:

From the highlands of southern Brazil comes a farm known for its pioneering spirit and meticulous attention to detail. Fazenda Santuario Sul is part of the Santuario Project, a group of experimental farms dedicated to cultivating rare varieties and exploring advanced processing techniques. With high elevations, selective harvesting, and precise fermentation protocols, the farm consistently produces coffees with striking clarity and complexity.

Starmaya Anaerobic
A modern hybrid variety developed for both quality and resilience. Through controlled anaerobic fermentation, this lot reveals a rich and expressive cup with notes of mulberry jam, red apple, and smooth caramel sweetness.
