Who said veg burgers canโ€™t be this good?

This soyabean burger brings together bold flavours, great texture, and comfort in every bite.

A wholesome burger that doesnโ€™t compromise on taste.

๐Ÿฅฃ Ingredients

For the Soyabean Patty
โ€ข 100 g soyabean
โ€ข 2 boiled potatoes
โ€ข 1 tsp ginger garlic paste
โ€ข Salt to taste
โ€ข Black pepper to taste
โ€ข Fresh coriander leaves, chopped
โ€ข 1 tsp oregano
โ€ข 1 tsp crushed red chilli flakes

For the Slurry (Coating Base)
โ€ข 1 cup maida (all-purpose flour)
โ€ข ยผ cup corn flour
โ€ข 1 tsp salt
โ€ข 1 tsp black pepper
โ€ข Water (to make a thick slurry)

For Coating
โ€ข Bread crumbs
โ€ข Oil for frying

For the Dip
โ€ข 2 tbsp mayonnaise
โ€ข 1 tsp tandoori mayo
โ€ข 1 tsp sriracha sauce

For Assembly
โ€ข Burger buns (toasted)
โ€ข Lettuce leaves
โ€ข Tomato slices
โ€ข Onion rings
โ€ข Cheese slices
โ€ข Prepared soyabean patties

It starts with crispy aloo tukโ€ฆ
gets tossed in bold masalaโ€ฆ
comes together with a rich, flavourful baseโ€ฆ

and ends inside buttery pav with melty cheese โœจ

Aloo Tuk Masala Pav โ€” comfort, layered to perfection.

Aloo Tuk Masala Pav

๐Ÿ”ฅ 1. Crispy Aloo Tuk
Ingredients
โ— 4 medium potatoes (peeled, cubed / chip-sized)
โ— 1 tbsp oil
โ— Salt
โ— Oil for frying (or air fryer option)
Method
Prep
1. Wash and dry the potatoes well.
2. Toss with oil and salt.
First Cook (Air Fry)
3. Preheat air fryer to 180ยฐC.
4. Air fry for 15 minutes until just cooked (not browned).
5. Remove and rest.
Smash & Rest
6. Lightly press each piece (donโ€™t flatten fully).
7. Rest for 30 minutes.
Final Crisp
โ— Deep fry: Fry in hot oil until golden & crispy
OR
โ— Air fry: 200ยฐC for 8โ€“10 minutes
๐Ÿ‘‰ Texture: crispy outside, soft inside

๏ธ 2. Tuk Masala
Ingredients
โ— 1 tbsp coriander powder

โ— 1โ„4 tsp turmeric
โ— 1 tbsp red chilli powder
โ— 1โ„4 tsp garam masala
โ— 1 tsp cumin powder
โ— 1 tbsp aamchur powder
โ— Salt
Method
1. Mix all spices in a bowl.
2. Toss hot crispy potatoes in the masala.

๐Ÿ… 3. Masala Base
Ingredients
โ— 1 tbsp oil
โ— 1 tsp cumin seeds
โ— 1 onion (finely chopped)
โ— 2 garlic cloves (minced)
โ— 1 tsp ginger paste
โ— 2 tomatoes (pureed)
โ— 1โ„2 tsp turmeric
โ— 1 tsp red chilli powder
โ— 1 tsp pav masala / chaat masala
โ— Salt
โ— 1โ„2 cup water
โ— 2 tbsp coriander leaves
Method
1. Heat oil, add cumin seeds.
2. Sautรฉ onion, garlic, ginger till golden.
3. Add tomato puree + spices + salt.
4. Add water and simmer 5โ€“7 mins.
5. Finish with coriander.

โ— 2 tbsp butter
โ— 1 tbsp sesame oil
โ— 6 garlic cloves (minced)
โ— 3 tbsp soy sauce
โ— 11โ„2 cup hot sauce (adjust to taste)
โ— 3 tbsp honey
โ— Spring onions (for garnish)
โ— Roasted sesame seeds (for garnish)

For the Keri Thecha Spread
โ— 1 raw mango (chopped)
โ— 1โ„4 cup peanuts
โ— 2โ€“3 garlic cloves (chopped)
โ— 1โ€“2 green chilies (chopped)
โ— Salt, to taste
โ— Fresh coriander leaves (chopped)
For the Sandwich
โ— 1 block paneer (cut into thick slices)
โ— 2 bread slices
โ— Butter (for toasting)
โ— Spicy mayo (for spreading)
For the Onion Salad
โ— 1 onion (finely chopped)
โ— Red chili powder, to taste
โ— Salt, to taste

๐Ÿ”ช Method
1. Make the Keri Thecha
โ— Heat a pan and sautรฉ raw mango, peanuts, garlic, and green chilies until lightly
golden and aromatic.
โ— Transfer to a mixer/chopper.
โ— Add salt and coriander leaves.
โ— Pulse into a coarse, textured paste (donโ€™t over-blend).

2. Toast the Bread
โ— Apply butter on bread slices.
โ— Toast on a pan until crispy and golden.
โ— Optionally sprinkle a little coriander while toasting for extra flavor.

3. Prepare the Onion Salad
โ— In a bowl, mix chopped onion, salt, and red chili powder.
โ— Toss well and keep aside.

4. Assemble the Sandwich
โ— Spread a generous layer of keri thecha on one bread slice.
โ— Place paneer slices on top and lightly press.
โ— Spread spicy mayo on the second bread slice.
โ— Add the onion salad over the paneer.
โ— Close the sandwich and press gently.

โœจ Serving Suggestion
โ— Cut into halves or triangles.
โ— Serve immediately with extra spicy mayo or green chutney.

Ingredients
Base
โ— 1 can (400 g) chickpeas, rinsed and drained
โ— 3 tbsp smooth peanut butter
โ— 2 tbsp olive oil
โ— 4โ€“6 tbsp ice cold water

Thai Aromatics
โ— 1 tbsp lemongrass (very finely chopped or paste)
โ— 1 tsp fresh ginger, grated
โ— 1 small garlic clove
โ— 2 green onions

Thai Flavor Elements
โ— 21โ„2 tbsp lime juice
โ— Zest of 1 lime
โ— 2 tbsp sriracha or Thai chili sauce
โ— 1 tsp soy sauce
โ— 1โ„2 tsp brown sugar or palm sugar

Herbs
โ— 1 handful fresh cilantro leaves
โ— 6โ€“8 Thai basil leaves (optional but amazing)

Texture
โ— 2 tbsp roasted peanuts, crushed
โ— Salt to taste

Blend
1. Add chickpeas, peanut butter, olive oil, lemongrass, ginger, garlic, lime juice, lime zest, soy sauce, sriracha, and sugar to the blender.
2. Add cilantro, Thai basil, and green onions.
3. Blend while slowly adding ice water until very smooth.
4. Taste and balance:
โ—‹ More lime โ†’ brighter
โ—‹ More soy โ†’ deeper umami
โ—‹ More sriracha โ†’ more heat
- Fold in crushed peanuts after blending.

Thai Coconut Soy Paneer
Ingredients
โ— 250 g paneer, cut into bite-sized cubes
โ— 1 tbsp soy sauce
โ— 4 tbsp coconut milk
โ— 1 tbsp ginger-garlic paste
โ— 1 tsp rice vinegar (or regular vinegar)
โ— Salt to taste
โ— 1 tsp toasted sesame seeds

Method
1. In a bowl, mix soy sauce, coconut milk, ginger-garlic paste, vinegar, and a pinch of salt.
2. Add paneer cubes and toss gently to coat. Let it marinate for 10โ€“15 minutes.
3. Heat a pan and lightly sear the paneer until golden and slightly caramelized.
4. Finish with toasted sesame seeds.

Thai Mango Salad
* 1/2 cup Cilantro
* 1 Cucumber
* 2 Mango, medium unripe green
* 1/4 cup Mint
* 1/4 cup Peanuts, roasted
* 1 Red bell pepper
* 1/2 Red onion
* 1 Shallots, fried
* 1 Thai chilli pepper, red

Condiments
* 3 tbsp Lime juice, fresh
* 1 tbsp Thai sweet chili sauce
* 1 tbsp Brown sugar, packed
Method:
1. Make the dressing.
2. Add all the chopper ingredients in a mixing bowl. Add dressing and mix.

Assembly โ€“ Thai Hummus Toastie
Ingredients
โ— 1 soft sub roll, sliced horizontally
โ— Spiced butter (butter + pinch paprika + garlic powder)
โ— Thai peanut hummus
โ— Thai coconut soy paneer cubes
โ— Pink pickled onions
โ— Microgreens
โ— Edible flowers (for garnish)

Method
1. Spread spiced butter on the inside of the sub roll and toast until golden and crisp.
2. Pipe the Thai hummus generously using a star nozzle for a textured look.
3. Arrange the warm Thai paneer cubes over the hummus.
4. Top with pink pickled onions.
5. Finish with microgreens and edible flowers.
6. Serve with salad on side
