Two recent outbreaks of listeriosis have been linked to the consumption of enoki mushrooms. Two varieties of enoki mushrooms were evaluated to determine the potential for Lm to contaminate enoki cultures when introduced at various points during cultivation (inoculation, scraping, pinning, and collaring).
