Tags printed ready to tag animals on a busy Homekill afternoon. All our Homekill is named before it goes onto the truck for full traceability, we weigh the beef on farm and let you know how long it will be hung for, days of processing and pickup time. All done on the day it's killed. Things are filling up over next 3-4 weeks. It's been a busy few days killing for Brett and I, these are some of the last sheep harvested for the year before Christmas. It's been an interesting year with farmers getting good prices for beef and sheep at the sale yards, Homekill wise we are down %25 for sheep processing but had our secound best beef processing year on record...

Following on from the last post, the easy part of killing and hanging is done
now the hard work starts for this big Beefie. Today we are breaking it down, trimming up all the cuts, throughout the coming week we will be mincing and producing smallgoods as well as slicing and vacuum packing all the fresh cuts. By Thursday night the meat will all be in the
blast freezer for a few days ready to pick up next Sunday.

More than a few thousand dollars tied up in this prime steer at 532kg! The Butchery is pumping with the Christmas rush on, we still have a wee bit of killing/processing space for sheep and Venison but beef and pork is fully booked. We will have room for more beef killing/processing mid-late January.
