Here's a job I done a couple weeks ago. Instead of ripping down the old walls and replacing with new gib we level 5 skim coated over the old walls throughout the house and they come up like new. So if your thinking of ripping off will paper or replacing gib and making a mess give me a call 1st and see if it's possible to bring the old walls back to new.
