Sometimes in the very height of summer we get extremely flakey sea salt. Generally at the shallow ends of the salt pans. Its light and very fluffy. Part of the production is set aside for our Special Reserve "Fleur de Sel".

If you are contemplating a little steak and red wine over the weekend - make sure you are seasoning it with this incredible sea salt. All the minerally saltiness of Opito Bay sea salt but blended with exotic Kampot Black Pepper from Cambodia. Known the world over as the "Champagne of Black Pepper". Potatoes.....A much misunderstood vegetable. Rather than as an accompaniment to a main meal I like to think of them as a dish in their own right. Of course the variety makes a difference. My favorite as a very good and actually tasty all rounder is a "Vivaldi Gold". Halved, dusted/encrusted with Opito Bay BBQ rub and roasted - then finished with some cheese and lastly a topping of cream cheese and spring onions.....hmmm winter treats!

Where we love to be. Opito Bay, Coromandel, New Zealand. This amazing ecosystem supports , kelp, crustaceans, fish and larger marine mammals. It's remote and a bit too far from anywhere. But we wouldn't swap it for the world!

Once you have tried "real", unprocessed, natural, sea salt it becomes a kitchen staple. Season all your proteins and finish with just the tiniest amount afterwards. The soft crystals will melt on your tongue and you get a longer, deeper saltiness than with processed sea salt. You really can taste the ocean in our sea salt!

Traditionally furikake is served on rice. It's the most simple and tasty of seasonings. But it packs a flavour punch. The nuttiness of the toasted sesame and umami of the the kelp are a big part of it, but the light chilli zing and subtle saltiness mean its a great pairing with fish like salmon, eggs and avo's too.

We are on an incredible Fennel and Thyme sea salt buzz this month. Maybe its the change in weather, but its fabulous on everything from pork to haloumi. I really love it on lamb or roasted veges too...Give it a whirl!
