Building or renovating a commercial kitchen?
🍳🏢 It’s a massive investment, and getting the layout, compliance, and equipment right from day one can make or break your service.
Before you start knocking down walls or buying that massive walk-in fridge, check out these essential Do’s and Don’ts of Commercial Kitchen Fit-Outs! ⬇️
🚨 THE DO'S
DO Design for Workflow: Think of your kitchen like an assembly line. Map out a logical flow from goods receiving and storage to prep, cooking, plating, and dishwashing. Minimise cross-traffic to keep your staff fast and safe!
DO Understand Local Regulations: Health codes, fire safety, grease trap requirements, and ventilation standards are non-negotiable. Work with a contractor who knows your local council's building codes inside and out to avoid costly fines or delays.
DO Invest in Quality Ventilation: A hot, smoky, poorly ventilated kitchen ruins staff morale and breaches safety codes.
Your extraction hood and HVAC system are the lungs of your restaurant—don't skimp here.
DO Choose Commercial-Grade Materials: High-grade stainless steel, non-slip epoxy or vinyl flooring, and washable wall panels might cost more upfront, but they withstand heavy-duty use and make nightly deep-cleaning a breeze.
❌ THE DON'TS
DON’T Buy Domestic Appliances: That high-end home oven might look sleek, but it is not built to run for 12 hours straight in a commercial environment. It will break down, and it will void your insurance.
DON’T Ignore Future Flexibility: Menu trends change! Try to use modular equipment or leave a little breathing room so you can swap out a charbroiler for a combi-oven down the road without rewriting your entire layout.
DON’T Forget Storage & Prep Space: It’s easy to get excited about the cooking line, but if you don't have enough dry storage, refrigeration, or prep tables, your kitchen will quickly turn into chaotic gridlock.
DON’T Cut Corners on Utilities: Inadequate power supply or poor drainage placement will halt your project or ruin your workflow. Ensure your plumbing, gas, and electrical mains can handle peak loads before closing up the walls.
💡 Pro-Tip: Bring your Head Chef into the design process early. They know the operational bottlenecks better than anyone!
