PRODUCTION CYCLE OF SCHINUS MOLLE:
Working with wild products means learning to observe before intervening. Schinus molle grows at its own pace, and our role is to accompany and monitor each stage of the process to preserve its quality and natural origin.
From the first blossom to the harvest-ready peppercorn, the process takes approximately 8 to 10 months, and each stage is essential:
FLOWERING
Between September and November, small white flowers mark the beginning of the production cycle.
DEVELOPMENT AND RIPENING
Over the following 6 to 8 months, the fruit develops and matures slowly, transitioning from a vibrant lime green to its characteristic rosy color, naturally concentrating its essential oils and aromatic properties.
RESPONSIBLE HARVESTING
Between March and July, harvesting is carried out entirely by hand, caring for the tree and the surrounding ecosystem to ensure its productive continuity.
