Christmas in Trinidad and Tobago

Christmas is a very social time in Trinidad and Tobago with most people having parties. Both children and adults go from house to house between neighbors and relatives and as we say over here (liming) gifts, food and drinks are being shared and given to one another.

Radio stations play Trinidadian Christmas carols and songs as well as traditional and contemporary carols from other parts of the world.

Trinidad and Tobago Parang
A special Trinidadian music, Parang, is also played. Parang is an upbeat Venezuela-Trinidad hybrid music normally sung in Spanish. Now there's also 'soca parang' where songs are sung in English. In the evenings around Christmas, many people like to be 'Parranderos' and go from house to house singing Christmas songs. Lots of different instruments are used in Parang including guitars and cuatros (a small four stringed guitar), violins, maracas (called chac-chacs) and (two wooden blocks which are known as toc-toc). If you've been good at singing, you'll hopefully be given some food and drink.

Most people paint and make repairs to their houses and hang new curtains and decorations (especially lights) for Christmas. Often, this is the time that most people buy new electrical appliances and furniture. Most families spend Christmas Day at home with friends and family members.

The Christmas day meal is usually prepared the night before also known as (Christmas Eve, The traditional Trinibagonian Christmas meal include apples and grapes, sorrel, ponche-de-creme (a version of egg nog), ham, turkey, homemade bread, ginger beer, pastelles (a version of tamales) and local wine.

Trinidadian Christmas fruitcake is traditional and is eaten in most homes. The fruits (such as raisins and cherries are usually soaked in cherry wine, sherry or rum for several months before Christmas!

New Year's Eve is known as 'Ole year's night' in Trinidad and is celebrated with lots of fireworks 💥 into the coming of the new year with crowded streets and loud music family,friends at each other homes and having ah time.

You know it’s Christmas in Trinidad when you start seeing mounds of Sorrel being sold everywhere usually around late November. It wouldn’t be a Caribbean Christmas or as we say over here Trini Christmas without a glass of sorrel.

Sorrel (Caribbean Sorrel) is actually the sepals of a hibiscus plant called Roselle or Hibiscus sabdariffa. It is a perennial tropical plant originating from East and West Africa and parts of Asia. Roselle is a member of the Malvaceae family which is related to okra, cotton, and cacao.

The name ‘sorrel’ that we use comes from its Spanish derived names, ‘saríl’ or ‘flor de Jamaica’. This is what the plant is known as across many English-speaking Caribbean territories and Central and South America. There are two main varieties of this plant, with one of them being a rare South African variety that produces smaller pods.

The red buds of the flower are what we use to steep the seasonal sorrel drink, but the blooms and leaves can be used to make other edible creations. They can be used in salad greens, teas, and jams.

If you have ever felt happy or calm after drinking sorrel it may be because the plant contains flavanoids, antioxidants that contain antidepressant properties. These also give them their beautiful, red pigment.

Considered a medicinal herb as well, sorrel has many other health benefits. These include being rich in Vitamin C to boost your immune system as well as treating coughs and fevers and having anti-inflammatory properties that can provide relief from menstrual cramps.

What does sorrel taste like?

Sorrel has a vibrant tart flavor similar to cranberries or currants. It is most often served as a sweet tea over ice, though you can have it hot too. The flower is edible, and can make a bright addition to salads. The tea is made by boiling the dried hibiscus in water with different spices, and sweetening it with sugar. Trust us when we say there ain’t no skimping on the sugar. Different cultures prepare their sorrel differently, putting their own special twist on it. Jamaicans are famous for adding ginger into the mix. Trinidadians aim for an opaque finished product, ensuring that you can’t see through it in a glass. Cinnamon and clove are quite common ingredients across the board. Citrus like lime, lemon or orange may also be added to the brew. Some people add rum (because, why not?), while some leave it virgin. The sorrel flavor lends itself nicely to jams and jellies too. Salad dressings can also be made with sorrel reductions. In Trinidad, there is even a popular shandy made with sorrel.

Health benefits

Sorrel isn’t just yummy, it’s good for you too! There are several benefits to having sorrel, but keep in mind that the amount of sugar you add could influence your health as well.

Sorrel or Hibiscus is high in antioxidants, and based on research may lower blood pressure and blood fat levels, and boost liver health. Due to its polyphenols, it may fight off a range of infections from pneumonias to UTI and even prevent cancerous cells.

Sorrel Drink Recipe

Ingredients

1.5 lb fresh sorrel flowers

8 cups water

1 cinnamon stick

2 pieces of dried orange peel

4 cloves

thick slice of ginger

sugar

Method

�1 Remove the core from the sorrel flowers and discard

�2 Place all ingredients in a large pot, cover with water and bring to a boil.

�3 Reduce to a gentle simmer for about 30 minutes.

�4 Remove from heat, cover and let it steep for a few hours, even overnight.

�5 Double strain with a very fine strainer or cheese cloth.

�6 Chill,Sweeten to your taste add your spices. For a stronger drink, increase the amount of sorrel petals you use, Significantly increase the amount of sorrel petals and the brew can be used as a concentrate. Simply bottle and store in the fridge. Use as needed (add a small amount to water, sweeten).

Seeds:

The seeds have tonic and antioxidant capabilities to aid in digestion and ward against colorectal and other cancers. It is also known, due to recent studies, to lower cholesterol and manage high blood pressure. Sorrel buds have strong nutritional value as they are high in calcium, iron, niacin, and riboflavin.

The roselle or sorrel shrub makes for a colourful addition to any home garden or hedge space. What sorrel lover would not want to have their own supply of this tasty and versatile plant?

Sorrel plants bloom during the months of September and October and take up to six months to fully mature. This therefore means that they should ideally be sown around mid-March to May. They can bloom within three months of planting once under very good conditions. Our tropical climate allows for this, so planting them during this time may possibly render a suitable harvest in time for Christmas.

Germination

Caribbean Sorrel germinates in soil with temperatures between 23°– 30°F with neutral pH levels. It prefers soils with good drainage that is not overly fertilised. Soils too rich in organic matter can lead to a full, large shrub producing fewer buds. Remember, harvesting these red buds is the main goal.

The seeds can be sown directly to your garden or via transplanting. If you have ever seen the way a sorrel plant grows, you may notice that it requires plenty room as they tend to be large shrubs. You should space out your seedlings about 3-6 feet apart in rows about 5 feet apart. Two plants will provide you with a sizeable harvest of sorrel buds. This is an easy to grow shrub, just ensure that the plot is w**ded and that it is situated in a place to achieve maximum sunlight exposure.

The potential to grow very large requires that support in the form of a metal or wooden stake be provided for your sorrel shrub as well. The branches tend to get weighed down the more it grows and more rain it is exposed to.

If planted at this time, it is best to allow nature to do the majority of the watering for you as over-watering can cause the roots to rot. During the dry season, ensure that the soil is kept evenly moist.

Knowing when to harvest your sorrel buds is important. Between 7-10 days after your sorrel shrub has fully blossomed and faded, is the best time to pick the buds or calyx. Mature sepals (the pointy red pod) should be just over an inch wide. This is actually the tender, fleshy seed pod that is used to make sorrel drinks.

It is highly suggested that you remove these with clippers and leave a few on the plant so that you can harvest the seeds at the end of the season. Dried sorrel will crack open easily to allow the seeds to fall out. Store them in a dark, cool location until ready to sow again.
