North Carolina has more than 100 wineries and just as many craft breweries, and the number of craft distilleries is catching up. The Fermentation Sciences (BS) degree at Appalachian State University, a unique feature of the University since 2012, is building an educated, innovative workforce for an array of diverse career fields. An interdisciplinary degree within the College of Arts and Sciences,

Fermentation Sciences provides students with a strong background in Chemistry and Biology with a food and beverage-based focus in Biotechnology and Sustainability. Faculty members have developed industry collaborations with local vineyards, wineries, breweries, distilleries, and biotechnology businesses to provide students with practical experience. Students leave Appalachian prepared to lead the workforce in fermentation sciences and are qualified to develop or manage businesses. Fermentation is inherently sustainable and environmentally compatible. Fermentation: is the cornerstone of sustainable food systems; permits the availability of meat, cheeses and fruit year-round; develops a scientific understanding to take an unpredictable process and create a more secure process for the preservation of food; incorporates aspects of sustainable business and sustainable practices (water usage, renewable resources and technologies).

Introducing Rootsii! Backed by a $1.82 million NCInnovation grant, Appalachian State University professor Dr. Brett Taubman (left), lab manager Daniel Parker (right) and a team of student researchers are transforming surplus North Carolina sweetpotatoes into a first-of-its-kind, plant-based milk. Their goal is to go from proof of concept to store shelves over the next two years.

Congratulations, Seleen and Masa! We know you will have amazing futures and we wish you the best.

Sisters Seleen and Masa Al Horani, originally from Jordan, graduated from the College of Arts and Sciences with Bachelor of Science degrees in chemistry (certified chemist concentration) and an impressive record of accomplishments to match.

At Appalachian State University, they were departmental honors students, Best Poster Award winners at the 2025 American Chemical Society meeting, and active leaders in the American Chemical Society student club. Working with their mentor, Dr. Petia Bobadova, they co‑authored impactful research on dyes with applications from biomedical imaging to solar cells.

Masa is headed to graduate school to continue her work in chemistry, while Seleen is exploring clinical applications of chemistry. Both credit undergraduate research, community, and involvement — from the Appalachian Chemical Society to INTAPP and the CAS Corps — with shaping their academic and personal growth.

Their advice to current Mountaineers: Get involved, find your community, and believe in your ability to meet challenges with resilience.
