I offer on the spot knife sharpenings at shows and fairs along with customers bringing me their cutlery to take home and sharpen at the shop.
I have a set price for sharpenings with the highest level of 12,000 grit , sub micron, commanding a steep price tag. Most people, when they ask me for "My very best", scoff at the cost I respond with and then walk away but I will not lower the price of my sharpenings. Why?
Below is a series of pictures from a customer who recently paid me to do "My very best".
I was able to get the edge of his knife so sharp you can wittle hair with. Not, shave hair...

I was able to very gently drag a single strand of hair across the apex and shave tiny sections out of the hair without breaking it. Circled in red are two piles of hair wittlings that collected on the bevel.
This level of sharpness and skill is not repeatable on a machine and can only be achieved by hand sharpening after hundreds of hours of practice.
This particular job took me 6 hours to do.
- 6 Hours I could have been making other things.
- 6 Hours I could have spent with my family.
- 6 Hours of meticulously and surgically dragging a knife edge across whetstones at an exact angle to achieve a level of sharpness that boarders on the fantastical.
The price is final, but the price is worth it...
