Waste not, want not! When cutting your veggies, store the leftovers/ends in the freezer and very soon you’ll have all you need for a delicious
Recipe idea below:
3-4 lbs of veggies
1-2 bay leaves
5-10 peppercorns
Salt to taste
3 garlic cloves
2 tbsp olive oil
1 gallon of water
Drizzle vegetables with olive oil and roast in a preheated oven at 450 for about an hour, stirring every 15 minutes.
Place all the roasted vegetables, along with spices in a large pot. Bring to a boil and then simmer until the water is reduced to half. Strain the broth and voilà, delicious veggie broth
