A team of Stockton University faculty members in southern NJ has been awarded a three-year United States Department of Agriculture grant to promote maple sugaring in the South Jersey region through research and community outreach.

Last week, I had the wonderful opportunity to meet with Danny Childs of restaurant. Danny is a master cocktail mixologist and is always experimenting with locally sourced products. He heard about our maple syrup and ran right over. We are so excited to see our unique flavor of Southern New Jersey crafted into beverages and foods that create a brand new expression of the region. Danny and his wife/photographer/coather are also interested in featuring our maple syrup in a recipe cookbook.

This partnership is just another in a string of developing relationships with local businesses, such as , , , and more. We will should have plenty of syrup to go around...we now have 11 gallons and the sap is still pouring in!

I've been meaning to give a shoutout to for their invaluable assistance with our project and research. For months leading up to the sugaring season, they have been dropping off fallen wood. Just recently, they gave us a bunch of old fence posts that they replaced. **don't worry...they are NOT pressure treated. Just really, really, really seasoned cedar and locust.**

And also...during this past snowstorm, they plowed us a path before I even got to campus. I was fully expected to dig my own self out...but they were at Stockton through the night, tirelessly making sure that everything was ready for staff, students, and faculty. They definitely don't get enough credit...but there is no way that this project could happen without them. Thanks guys!

This was our swampy nightmare / amazingness of yesterday. The melted snow, combined with rain just created mud all over the place. Our truck got stuck three times, our clothes were completely soaked, and the sap just kept coming and coming and coming and coming and coming

Well, I guess when it rains, it floods. We collected about 600 gallons of sap from that forest yesterday. It was kind of weak (about 1 percent), but our RO made short work of that. Not sure why it's so weak...the trees were producing 2 percent last year. Maybe something to do with the rain. Also interestingly...the buckets in our adopt a tree really aren't producing much yet.

Does that mean that vacuum tapping pulls more sap but lower sugar content? Unlikely...that's not really how the tree works. But there is year to year variation in how much sugar trees produce. And we only have one year of data so far.

Anyways, we made about 5 gallons of syrup. Looks and tastes delicious! We could have done with the rain and snow though...

It's a bit warmer out today, but we aren't seeing much sap from our trees. One of the frustrating things of tapping is getting the timing down. Tap too early and the tap holes heal over before the sap starts flowing. Tap too late, and you don't harvest all potential sap.

How do we know when to tap? We don't. Having a vacuum attached to our lines gives a little bit of cushion (vacuum and special check-valve taps keeps the holes fresher for longer). But for those of you collecting with buckets, you really have to time things right.

Given the uncertainty of everything in a new climate, I like to tap a tree on a day like this...just to see if a fresh tap hole would produce anything.

It's not. Trees are frozen. That's good news. It means that our tapholes are probably not healed over. Things are just cold.

On snowy and cold days like this, I like to take a moment and reflect on how much work we have done to get our sugarbush up and running. Countless weeks of work by so many people...tapping tree by tree...all for a little bit of syrup. No wonder why they call this stuff liquid gold.

In these pictures, you can see and getting some of the mainlines ready. And this memory would not be complete without a shout out to (Joe Russell) who was there from the beginning to get our first batch of trees tubes and tapped.

I absolutely love old, urban trees. This beauty has such character. At 146 inches circumference, think about what it has lived through. Trees in forests just grow straight and tall to outcompete everyone else for sunlight. Urban trees don't care. They go wherever. And when they make leaves...the shade is better than any manmade canopy in existence. Take good care of this one and pour a bit of sap put to honor this elder.

It doesn't look like much, but this hydrometer is sitting in a test cup filled with 65% sugar maple syrup. Congratulations to on their very first boil and batch of maple syrup, done in a sapling evaporator.

As they expand with the number of taps and gallons of sap, we hope to supply them with a larger evaporator with the help of .
