— Americano Pizza Truck 🍕

This Classic Pizza Truck was built for Americano Pizza Truck in partnership with Vinny and Nicole, and then sent up to Long Island, New York.

These builds are always special because each Classic Pizza Truck starts with an original cab and becomes something completely custom from there. From the restored vintage look to the fully built-out mobile kitchen, every detail is designed around the client, their menu, and how they plan to serve.

There is just something about seeing one of these trucks brought back to life and put back on the road — especially when it is headed off to start serving pizza in a new city.

A few years ago, this retired fire station ambulance rolled into our shop for a second chance at life.

What once responded to emergencies now serves up meals, proving that a good rig’s story doesn’t have to end when its first career does.

We helped transform this former ambulance into Shirley Ann’s Kitchen, giving it a fresh purpose while keeping the durability and character that made it special in the first place.

From emergency calls to customer lines, it’s always fun to see unique vehicles reinvented and put back to work in a completely different way.

We have been waiting for the right moment to share this one…

Now that there is something real to show, it is time to officially unveil what we have been working on for Square State Brewing.

This custom pizza trailer is starting to take shape, and the Gorilla team is building it with durability, longevity, and real-world use in mind. The walls are up, welding is nearly finished, the axles and tires are installed, and the subfloor is in place. We are currently working through the connecting ribs, plywood installation, and prep for wiring runs.

This project came to us through Pizza Culinary Academy, and we are excited to be collaborating with them as this build comes together. They are helping bring the pizza equipment side of this project together, including the Moretti Forni oven, Infrico pizza prep table, and MacPan mixer that will eventually be installed into the trailer.

There is still a lot more to come, but this is the first real look at the start of something pretty special.

Vintage-Style Trailers: Pizza Trailer Edition 🍕

This is where the build starts taking shape.

Before the stainless, equipment, serving windows, paint, and final details come together, it starts with a solid foundation — custom steel framing, structural walls, and aluminum exterior prep built to handle real mobile food service use.

For this vintage-style pizza trailer, we’re building from the ground up with:

2x6 tube framing
1.5” square tube walls
Fluted .063 aluminum exterior

Every trailer has to be more than just good-looking. It has to be functional, durable, service-ready, and built around the client’s actual workflow.

From the first frame weld to the final finish, this is what custom fabrication looks like.

From concept to Classic Cab Pizza Truck.

Every build starts with drawings, renderings, and layout planning — but the transformation really begins once the chassis is stripped, the vintage cab is restored, and the custom bed enclosure starts taking shape.

These trucks are not cookie-cutter builds. They are part restoration, part fabrication, and part custom mobile kitchen. From framing and equipment placement to ventilation, electrical, plumbing, and finish work, every detail has to come together to create a truck that looks classic but works like a modern food service unit.

Prepping the E-450 chassis for its next life. 👊

For this stage of the build, we carefully removed the original van cab from the chassis. Before anything came apart, the wiring was disconnected, labeled, and organized so we know exactly where everything needs to go as the build continues.

From there, we began modifying the chassis to prepare it for the custom bed enclosure we will be fabricating and installing. This part of the process takes a lot of careful measuring, planning, and adjustment because the structure has to be built correctly from the ground up.

Eventually, the original van cab will be replaced with a classic cab, giving this build the vintage look while still using a strong, modern platform underneath.

This is the kind of behind-the-scenes work most people never see, but it is what makes a custom build come together the right way.

At Gorilla Fabrication, our Classic Pizza Trucks start with vintage cabs that have history, character, and that old-school charm you just can’t recreate with a modern vehicle.

But we don’t leave them stuck in the past.

Each cab is restored, repaired, prepped, painted, and brought back to life so it has that clean, refreshed, like-new appearance — while still keeping the timeless look that makes people stop and stare.

From there, we build out the mobile pizza unit behind it with the equipment, layout, and fabrication needed to serve in style.
