6:00 a.m. Produce is coming off the truck, prep is pulling proteins, and the walk-in door is opening every few minutes. The walk-in is where a kitchen protects its food and its food cost, so we took a walk through one, from the inside out.

Inside: Kolpak builds coolers and freezers from simple nominal walk-ins to fully custom boxes.

Doorway: the optional Air Shield sends a barrier of refrigerated air across the opening whenever the door is open, so less warm air gets in.

Door: the door takes the most abuse, so Kolpak builds it with a foamed-in-place steel frame, a hydraulic closer and field-adjustable, spring-loaded hinges to hold a tight seal.

Refrigeration: Tru-Dmnd by ArcticFox runs defrost only when it is needed, avoiding up to 93% of standard system defrost cycles. Fewer defrosts mean steadier temperatures for everything on the shelves.

Outside: KoldFront coolers and freezers come in sizes from 6' x 8' to 10' x 12', in 2' increments.

Thawing is one of the easiest places for food safety to slip. When prep is behind, shortcuts happen, and multi-unit operators can end up with a different thawing routine at every store.

A dish room without a hood can feel like a dead end, especially in renovations, tight spaces and older buildings where adding ventilation isn’t simple.

Champion Industries ’s DH6000T-VHR offers another path. This ventless heat recovery door-type machine is recommended for establishments up to 75 seats and is ENERGY STAR certified. It uses 0.73 gallons per rack, gives you 27" of extended hood clearance for sheet pans and larger wares, and has a programmable sleep mode that powers the heaters down when the machine sits idle.
