Basic little lentil and rice. That taste card never declines. Why is that dish so delicious?

I have added a cup of greens, avocado, chopped shallots, scallions, and believe it or not chopped cactus (It was missing cilantro, but I lived) and the obvious halved cherry tomatoes.. The red sauce is from Trader Joe’s. Its their knock off Sriracha. Then, I added drizzles of coconut amino. I literally had to turn off everything around me so I can hear my taste buds sing.

 The difference (besides the other added listed ingredients) is that I soaked both the rice and the lentils (separately)for two days, so they kind of fermented just a tiny bit. The volume of taste was through the roof 👀 for such a humble meal. Who else likes lentils?
