~210,000 termites ready to be shipped off for composition analysis. These tiny little guys turn carbohydrates (wood waste) into protein in a ridiculously efficient manner. And here is a little sneak peak of what the analysis will tell us:
- A source of complete protein
- High protein content
- A great amino acid profile, including tryptophan (the most sought-after AA), and something uncommon in most other insects being farmed for nutrition
- Low in fat with most of the fat content being Omega-3 fatty acids
- Rich in iron and calcium
Have we mentioned that termites use an estimated 95x less land, 26x less water, and 20x less feed input than traditional livestock to reach equal amounts of protein? On top of that we capture all GHGs produced and we can use their frass as a regenerative agricultural product? They truly are game changing.
