Last week, we had the amazing opportunity to attend the Masters of Taste: Drivers of Flavour in Chocolate seminar at The Callebaut Chocolate Academy SA with SAAFFI

This fascinating session unpacked the key influences behind chocolate flavour, exploring how origin, processing, and application all shape the final taste experience.

One of the key highlights was learning how terroir, growing conditions, fermentation, and roasting styles influence the flavour of chocolate.

We also tasted chocolates from different origins to experience first-hand the difference origin makes.

We gained some valuable insights into application, learning how format and serving conditions can change what you perceive in the very same chocolate.

It was an incredibly interesting and educational experience, and we walked away with practical insights we can use every day - especially when helping customers choose the right chocolate for the right application.
