Why do the and of a finished product differ from the reference sample? 👃

A raw material had been replaced and on paper, everything matched: same recipe, same supplier, same specification sheet. The standard GC-MS screening showed no significant deviation.

However, when we performed gas chromatography–olfactometry (GC-O) with a trained sensory panel, we identified two aroma-active compounds that had not appeared as relevant findings in the conventional GC-MS data. The taste and aroma profile were different than before - and consumers perceived the change. 🧪

Individually, their concentrations were extremely low. But together, they had a surprisingly strong impact on the overall aroma profile. Some aroma compounds have exceptionally low odor thresholds, meaning that even trace amounts can have a significant sensory effect.

In other words:
🟢 Barely detectable analytically does not mean barely noticeable sensorially
🟢 A compound can be present at an extremely low concentration and still have a major influence on how a product smells or tastes
🟢 What meets a specification on paper may not necessarily deliver the same sensory experience to the consumer

This is where analytical chemistry and sensory science need to work together: Our solution was not a complete reformulation or a return to the original raw material. Instead, a targeted adjustment based on a better understanding of the underlying aroma chemistry was sufficient to bring the product profile back in line with the reference. 🎯

Specifications tell you what should be there. Advanced aroma analysis and sensory science help you understand what actually matters.

Are microbiological tests suitable for ongoing testing programs? 🤔

Yes!

testing is not only valuable for investigating individual quality issues - it is also an essential part of routine quality assurance and monitoring programs. 🧫

Regular microbiological analyses throughout production, incoming goods inspections, and quality management help manufacturers identify potential risks early, verify hygiene standards, and ensure consistent product quality over time.

This is particularly important for products with high hygiene requirements or increased microbiological sensitivity. 🔬

By integrating microbiological testing into regular quality control programs, businesses can:
🟢 Reduce risks
🟢 Maintain product consistency
🟢 Meet regulatory requirements
🟢 Strengthen consumer trust

At Tentamus, we combine scientific expertise with advanced laboratory methods to help and believe that preventing microbiological risks is always more effective than responding to them.

season is here – but how safe is your ? 🌭🔥

For sausage manufacturers, retailers, and food businesses, quality and safety need to be controlled long before the product reaches the grill.

What can sausage analysis tell us? Depending on the product and its intended use, our testing can help assess:

🦠 Microbiological safety - Testing for relevant pathogens and hygiene indicators is essential to identify potential microbiological risks
🥩 Composition & authenticity - Does the sausage contain what the label says? Analytical testing can help verify ingredients, species and product composition
🧪 Chemical safety - Testing can identify contaminants and undesirable substances that may pose a food-safety concern
📋 Shelf life & storage stability - Microbiological and sensory testing can help establish whether products remain safe and meet quality expectations throughout their declared shelf life

Analytical data can support nutritional declarations and help verify compliance with applicable requirements.

🔬 Our global network of laboratories supports the food industry with comprehensive food safety and quality testing – from microbiological and chemical analysis to authenticity testing, shelf-life studies and regulatory support.

Can microbiological testing help investigate product complaints or abnormalities? 🤔

Absolutely!

Unexpected changes in odor, appearance, texture, or shelf life can be early indicators of microbiological contamination or hygiene issues. When customer complaints arise, microbiological testing provides a scientific approach to systematically identify the root cause and support informed decision-making. 🦠

By detecting spoilage organisms, pathogens, or hygiene deficiencies, manufacturers can:

🟢 Investigate customer complaints efficiently
🟢 Identify potential contamination sources
🟢 Verify product quality and safety
🟢 Support corrective and preventive actions
🟢 Protect consumers and maintain brand trust

🔬 At Tentamus, our accredited offer comprehensive microbiological testing to support complaint investigations and quality assurance, including:

✔️ Detection of foodborne pathogens such as Salmonella, Listeria monocytogenes, and E. coli
✔️ Spoilage organism identification
✔️ Environmental and surface monitoring

With advanced analytical methods and scientific expertise, we help businesses identify microbiological risks, resolve quality issues, and strengthen product safety throughout the supply chain.

is here🚨

Starting today, August 12th, the EU and Packaging Waste Regulation (PPWR) becomes directly applicable across all Member States, introducing significant new compliance requirements for packaging and packaged products. 🇪🇺

While many PPWR provisions will be phased in over the coming years, key obligations take effect immediately, including:

✅ New EU-wide limits for PFAS in food contact packaging
✅ Existing heavy metal limits remain in force
✅ Mandatory technical documentation and EU Declaration of Conformity
✅ Conformity assessment before placing packaging on the EU market

👉 Who is affected?

PPWR applies to far more than packaging manufacturers. It impacts:

🟢 Manufacturers
🟢 Importers
🟢 Brand owners and private label companies
🟢 Distributors and retailers
🟢 E-commerce and logistics businesses

👉 What should companies do now?

🟢 Review supplier information and material composition
🟢 Assess whether additional analytical testing is required
🟢 Perform PFAS, heavy metal, migration, and food safety testing where necessary
🟢 Prepare technical documentation and EU Declaration of Conformity
🟢 Clearly define regulatory responsibilities throughout the supply chain

At Tentamus Group, we support companies throughout the entire PPWR compliance journey - from laboratory testing and migration studies to regulatory gap analyses, conformity assessments, technical documentation, and tailored PPWR training. 🤝

Successful collaboration starts with meaningful face-to-face exchange 🤝

As part of a strategic project, we had the pleasure of welcoming our colleagues from agap2 to our lab bilacon, where they presented the results of their work together.

Here are our highlights of the day:

🟢 An engaging one-hour presentation demonstrating how Data Science and Machine Learning can be translated into real business value for our stakeholders
🟢 Excellent feedback from our project managers and bilacon leadership, confirming the impressive progress of the project and the exciting opportunities ahead
🟢 An open feedback session over lunch, creating space for valuable discussions and new ideas

On top of that, our agap2 colleagues enjoyed a guided tour through our . 🔬

The tour covered:
🟢 Sample reception and preparation
🟢 Instrumental analysis
🟢 Microbiology
🟢 Chemical and physical analysis

For colleagues with a background in medical technology laboratories, this was a great opportunity to explore another area of the Life Sciences industry and deepen our cross-disciplinary collaboration.

The day concluded with a great celebration at the bilacon summer party, where we also recognized some important milestones:

🏅 Welcoming our new apprentices to the lab
🎓 Celebrating apprentices who successfully completed their training
🎖️ Honoring long-serving colleagues, 10 and 15-year anniversary with the company

A huge thank you to everyone involved for the inspiring presentations, engaging discussions, and fantastic teamwork. 👏

We look forward to continuing this collaboration and achieving even more together in the future. Follow us to stay up to date. 💚

🍻 What would beer be without hops?

On International Beer Day, let's take a closer look at one of its main ingredients: hops!

Hops give beer its distinctive bitterness and aroma, while also contributing to its stability and shelf life.

Our laboratories analyze hops, pellets, and extracts for:

🟢 Alpha acids, essential oils, and polyphenols
🟢 Pesticide residues, heavy metals, and mycotoxins
🟢 Varietal purity and sensory characteristics
🟢 Aroma compounds behind hop character

Reliable analysis helps breweries and hop producers ensure quality, safety, and consistent flavor at every stage of production.
