It’s SALAMI time! 🐷
We always fill our salami with a filler, they are quick and easy, and offer great control to the user. All of our fillers come with 4 different size nozzles to suit small or large casings. The model in the video is a Reber 5kg Stainless Steel Sausage Filler - Made in Italy of course.
The casings used are dehydrated casings when making salami. They are natural product (in this case hog collagen) that are formed in to a shape and dehydrated. These are sealed on one end. They perform the same as fresh casings, but have the advantage of being uniform in size and quality, they’re stronger than fresh casings, don’t require cleaning, and no smells! Simply rehydrate for a couple of seconds - we use wine - and fill!
