Italian Pasta Salad

Ingredients:
• Tomatoes
• Purple onion diced
• Bell peppers diced
• Black olives
• Green olives
• Salami
• Pepperoni
• Mozzarella cheese
• Pasta of your choice (we used mini bow tie)
• Italian dressing
Directions:
• Boil pasta for about 8/10 minutes or until tender
• Drain pasta and rinse in cold water
• In a large mixing bowl add cold pasta and Italian dressing
• Dice all veggies, cheese and meat into bite size pieces and add to pasta a dressing
• Mix well
• Serve and enjoy

Chickpea Tuna Salad

Ingredients:
• Canned tuna
• Cherry tomatoes
• Purple onion
• Cucumbers
• Chickpeas
• Spring mix
• Bell peppers
• Feta crumbled cheese
• Creamy Italian dressing
Directions:
This is a chop, dump and enjoy recipe.
• Cut your spring mix, cucumbers and tomatoes into small bite size pieces.
• Dice the purple onion and bell peppers
• In a large mixing bowl add all chopped veggies
• Open tuna and chickpeas and drain- add the veggies
• Add feta crumbles and creamy Italian dressing
• Stir well, serve and enjoy

Smothered Taquitos

Ingredients:
• Beef taquitos
• Chicken taquitos
• Refried beans
• Enchilada sauce- we used green
• Pico de Gallo
• Guacamole
• Sour cream
• Shredded cheese- we used queso
• Cilantro lime rice
• Fresh cilantro
Directions:
• Preheat your oven to 400 degrees
• Spray the bottom of the baking dish with cooking spray
• Place a layer of taquitos alternating chicken and beef
• Spread refried beans, pico de gallo, cilantro lime rice, fresh cilantro and enchilada sauce across the layer of taquitos
• Use half of your shredded cheese and sprinkle it evenly across your first layer
• Repeat this process for a second layer, adding guacamole to this layer
• Top with the other half of your cheese and a handful of cilantro
• Bake for 20 to 30 minutes
• Serve and enjoy!

Yesterday in Bible Buddies we had a group discussion about HONESTY and being TRUSTWORTHY
There were 4 different activities to this lesson:
1. Comparing a fake apple to a real apple
- Which one can be eaten?
- If you were offered a fake apple and a real apple which, would you take?
- If you were offered a real apple, but found out it was fake when you bit into it how would you feel?
This was an example of how disappointing lies can be. God wants us to be real and true.
• Ephesians 4:25 – "Therefore each of you must put off falsehood and speak truthfully to your neighbor.

2. Use a piece of paper and tear it- this is what happens to friendships, relationships, co-workers, etc. when we are dishonest
- People sometimes break promises, but God never does.
- Everything from God is 100 percent true.
- God always tells the truth
- When we hide the truth, it makes people sad and breaks their trust
- When the paper is taped back together is it the same as it was before it was ripped?
- When we hurt others by being dishonest, even if we fix it and apologize- we can be forgiven but the damage and hurt may take them a while to get over
This example explains that keeping secrets makes our hearts heavy, but telling the truth makes our hearts light and happy. As well as when we are dishonest how hurtful it can be to others and to God.

• Proverbs 11:3 – "The integrity of the upright guides them, but the unfaithful are destroyed by their duplicity."

3. In the 3rd part of the lesson, I gave examples and asked the class if it was “honest” or “lie”
- You drop a glass and it breaks, you say, “I am sorry I broke that I will clean it up.” HONEST
- At work you are asked to clean the bathroom, you go in and come back out and say you cleaned it, but you really did not. LIE
- A friend asks if you want to get together to play a game, but you are very tired and don’t feel like it. You tell them I am sorry I am so tired today, maybe another time. HONEST
• Luke 16:10 – "Whoever can be trusted with very little can also be trusted with much."

4. Closing prayer- Drear God, thank you for always telling the truth. Help my mouth to speak good words and be truthful. Help my heart to be honest. Amen

• Proverbs 12:22 – "The Lord detests lying lips, but he delights in people who are trustworthy."

Yesterday in Health and Wellness class we had a group discussion on "The Importance of Drinking Water"

SUMMARY:
Water is essential for the body because about 60% of the human body is made of water, and every cell and organ depends on it to function properly. It helps lubricate joints, form saliva and mucus, transport oxygen through the blood, improve skin health, cushion the brain and spinal cord, and regulate body temperature through sweating. Water also supports digestion, removes waste through urine and sweat, maintains healthy blood pressure, keeps airways functioning properly, and helps deliver nutrients and minerals throughout the body. In addition, staying hydrated protects the kidneys, may improve exercise performance, and can support weight loss by increasing fullness and replacing sugary drinks.

The body gets water from both food and beverages, but most hydration comes from drinking water. Since water is constantly lost through sweating, urination, and even breathing, it must be replaced regularly. Water is considered the best source of hydration, while milk and juice can also help. Drinks with alcohol or caffeine are less ideal because they may contain extra calories, although research shows caffeinated drinks only cause minimal fluid loss.

💚 May is Mental Health Awareness Month 💚

At We Can Too, we believe mental health matters — for everyone. Taking care of your mind is just as important as taking care of your body, and no one should ever feel alone in their journey.

This month, we want to encourage open conversations, compassion, understanding, and support for those facing mental health challenges. Whether someone is battling anxiety, depression, stress, trauma, or simply feeling overwhelmed, kindness and support can make a world of difference.

Remember:
✨ It’s okay to ask for help.
✨ It’s okay to rest.
✨ It’s okay to not be okay.

Together, we can break the stigma surrounding mental health and create a community where everyone feels seen, heard, valued, and supported.

Dill pickle salad

Ingredients:
• Salad mix
• Canned chicken
• Dill relish or pickles diced
• Bacon pieces
• Banana peppers
• Dill ranch dressing
• Shredded cheese of your choice- we used mozzarella and parmesan
Directions:
• Open and drain your canned chicken
• This step is optional- in a skillet with seasoning and pickle juice heat your chicken and set it aside (this does not have to be done as canned chicken is already pre-cooked but we did this to add flavor)
• In a large container add your chicken, salad mix, bacon, banana peppers, dill relish or pickles diced, shredded cheese and dill ranch
• Mix thoroughly until everything is coated and evenly distributed
• Serve and enjoy
